Jewell: As the name suggests, this luscious rotan is a favorite for mashing and roasting.
Oriental: With your usual ivory meat on the inside, this variety with a deep purple exterior is the best to chew, fry and jazza up Asian food. (It also looks like potato mushroom!).
Garnet: With the texture and appeal of an d'Anjou pear, this variety adds color to any dish.
Covington: Perfect for mashing and baking, its peach-flavored exterior matches its sweet meat.
O'Henry: Look familiar? With pale skin and a creamy interior it looks like a potato with a unique sweetie.
When is sweet potatoes in season?
As a complete aficionado, Jenné Claiborne, author of the upcoming Sweet Potato Soul: 100 Easy Vegan Recipes for southern flavors of smoke, sugar, spice and soul and co-founder of vegan meal planning service Buddhalicious, buying sweet potatoes every month this year. Risky? Not like that. "They are available year round, because when harvested, they can be stored and kept fresh for 12 months," she says. But if you want to get lost on the seasonal page, she notes that you want to stock up when harvested in October, November and December.
HOW TO PICK THE BEST SWEET POTATOES?
Sweet potatoes are generally unassuming from the outside, so you will only be able to wonder their deep gemstones before checking out. But Claiborne shares some tips: "Look for sweet potatoes that are heavy for their size, which means they would not feel hollow on the inside or made of foam," she says. They should be smooth, no bruises or soft spots and feel firm. Avoid any bruising, defects or skin irritation. Choose them with a relatively symmetrical shape that can facilitate cooking.
